@tony_bronx next time, i might go 2c almond flour and leave in the second egg white for a bit more body, as i said. as-is, they bake out fairly flat with crispy, lightly browned edges and chewy, moist centers. i'll freeze dough next time to see if that minimizes spread for a higher cookie. — PolitiTweet.org

@tony_bronx for the chai spices, i actually used the spice house's chai spice blend. i love it. but you can make your own, or just mix cinnamon, cardamom, ginger, allspice, nutmeg and cloves you have on hand, about 1:1. i tossed them in with the extracts, prob ~1.5 tsp. — PolitiTweet.org

@tony_bronx if those adjustments do make for a thicker cookie, as i suspect they will, i think these could be a great candidate for a snickerdoodle base, in which case i would mix the chai spices .25:1 with sparkling sugar for the outer coating. — PolitiTweet.org
