so i use those blocks of chili paste in many things! i do use them in chili, but i think they really shine in the 'gravy' that goes on tex-mex enchiladas. it's just a roux + 1/2c chili paste + the braising liquid from the pork + chili powder, garlic, cumin, s+p to taste — PolitiTweet.org
