@emichaeljoseph got the roast out, patted dry with paper towels, seared on all sides in a skillet. used mortar and pestle to grind rosemary, salt, peppercorns (black and white), garlic and butter. rubbed the paste on the roast. roasted at 350 until temp registered 115F. voila! — PolitiTweet.org
